Food Sanitation Rules
To meet inspection requirements, the Health Department recommends you abide by the following rules:
- Do not cross-contaminate foods. For example, do not prepare salads on a cutting board where you have just cut up raw chicken. Wash and sanitize the cutting board after it is contaminated with raw meats.
- Keep hot foods hot (140 degrees Fahrenheit) and cold foods cold (45 degrees Fahrenheit). This includes meat, seafood, milk and milk products, cooked rice, and other products where bacteria can multiply.
- Purchase food from a reliable source.
- Wash hands before preparing food. Wash hands after handling raw meats. Wash hands after using the toilet or whenever they become dirty.
